Good bacterias also may reduce when over boiling is done.Best way to get these friendly bacteria is by consuming buttermilk, Sprouts, salads , certain pickles ,Pazhaya sadam which is fermented after cooking by keeping overnight by adding water, certain porridges gives better good bacteria because it multiples more and more as you keep.

Yes.B12 increases tremendously by Fermentatition.It is not completely destroyed in Idli / dosa or kanji.Only when a dish is boiled for longer period like a kulambu or
Gravy B Vitamins are lost.
